THE RITZ’S SPECIAL SMOKERD SALMON SANDWICHESI SPECIAL TRAMEZZINI WITH SMOKED RITZ SALMON

100 grams of smoked salmon of excellent quality
150 ml of liquid cream
half a teaspoon of white pepper
a quarter of a teaspoon of ground nutmeg
150ml double cream
buttered black bread

Finely chop the 100 grams of smoked salmon. Incorporate the liquid cream and pass the mixture into a colander by squeezing with the back of a wooden spoon. Incorporate whiskey, pepper and nutmeg if you want. Put in the refrigerator. Lightly whip the heavy cream and add to the cold mixture, a little at a time. Spread the filling on the slices of buttered bread, crush and cut off the crusts. Keep the sandwiches covered with a clean cloth after dipping in cold water and squeezing strongly until ready to serve. Serve the sandwiches with a lemon wedge.
Scottish eggs also called Egg Ball or Scotch Egg are an English dish consumed as an appetizer but also perfect for tea time. These are hard-boiled eggs – which can be chicken or quail – wrapped in pork and then coated in breadcrumbs. Then fried (you can also do it in a vegetarian version, yes. We’ll talk about it soon).

Scottish, but it seems that they were born in London in the Fortnum & Mason warehouses, they are considered to all intents and purposes a snack. Perfect for picnics, finger food and appetizers, these eggs are also perfect for tea time. They seem difficult to prepare but in reality they are really simple to make, and also quite spectacular and appetizing. In short, with Scotch Eggs you will surprise, no doubt.

BUT THE YOLK MUST BE CREAMY?
The yolk should actually be cooked as little as possible (this is my first try, forgive me? In reality the photos are dated and date back to almost two years ago but over time I have learned) and even remain creamy at the first bite. Many books recommend cooking them for a maximum of 4-5 minutes. For fear that the egg white would not cook, I let them go for 10 minutes as usual and I did the damage, uff. After that it went better (but I have no photographic documentation at the moment). In short, a middle ground: six minutes. What do you say?

For perfect Scotch Eggs just go to Youtube and he is there: Gordon Ramsay! He prepares them before our incredulous eyes. Next time he absolutely proposes his recipe: he even puts six kilos of lemon in it. And who are we to blame Gordon?
INGREDIANTS:
4 medium-sized eggs
200 grams of sausage without the external casing
250 grams of minced pork
Worcestershire sauce
nutmeg, salt and pepper.
To bread you will need

3/4 medium sized eggs lightly beaten
150/160 grams of breadcrumbs
and flour as required
sunflower oil for frying.
Put the eggs in a saucepan and boil them for about 6 minutes. In a bowl, prepare the meat: combine sausages without casings, ground beef, nutmeg, salt and pepper. Go for Worcestershire sauce generously. With your hands, as you usually do with meatballs, take some meat and form a sort of burger that is only bigger. In the center, place the shelled hard-boiled egg and then wrap it with the same meat until it forms a nice meatloaf. Once all the eggs have been prepared, pass them in the flour, then in the beaten egg and in the breadcrumbs and fry in boiling oil until submerged.
