Finely chop the 100 grams of smoked salmon. Incorporate the liquid cream and pass the mixture into a colander by squeezing with the back of a wooden spoon. Incorporate whiskey, pepper and nutmeg if you want. Put in the refrigerator. Lightly whip the heavy cream and add to the cold mixture, a little at a time. Spread the filling on the slices of buttered bread, crush and cut off the crusts. Keep the sandwiches covered with a clean cloth after dipping in cold water and squeezing strongly until ready to serve. Serve the sandwiches with a lemon wedge.

4 medium-sized eggs
200 grams of sausage without the external casing
250 grams of minced pork

3/4 medium sized eggs lightly beaten
150/160 grams of breadcrumbs

Put the eggs in a saucepan and boil them for about 6 minutes. In a bowl, prepare the meat: combine sausages without casings, ground beef, nutmeg, salt and pepper. Go for Worcestershire sauce generously. With your hands, as you usually do with meatballs, take some meat and form a sort of burger that is only bigger. In the center, place the shelled hard-boiled egg and then wrap it with the same meat until it forms a nice meatloaf. Once all the eggs have been prepared, pass them in the flour, then in the beaten egg and in the breadcrumbs and fry in boiling oil until submerged.
