The apple pie with almonds is one of the most renowned and famous versions. Almond flour gives a very particular aftertaste in combination with apples. Very fragrant with lemon, moist and incredibly soft, it is perfect for tea time but also for breakfast.
The recipe for this delicious apple pie:

For about 6 people: 21 cm baking tray. 150 grams of sugar, 4 eggs, 100 grams of flour, a sachet of yeast, 100 grams of chopped almonds, 3 apples of 130 grams each, the juice of a lemon and the zest (if you don’t like the taste of lemon you can use vanilla or cinnamon).

Procedure: Chop the almonds. Divide egg whites from yolks. Obtain the juice of one lemon and grate the peel. Peel the apples and cut them into cubes and put them in the lemon juice so they don’t blacken. Beat the egg yolks with the sugar until you get a frothy mixture. Separately whip the egg whites. Combine the egg whites with movements from the bottom up to the yolks and sugar mixture, and the yeast. Then add by sifting the flour and chopped almonds. Add lemon zest or vanilla / cinnamon (whichever you choose). Do not do this with a mixer but simply with the spatula. Once the mixture is well blended, pour into a floured and greased pan and cook for about 50 minutes in the oven. It depends on the oven and it must be already hot at 180. When it is golden, do the toothpick test after 50 minutes. Calculate that there is still moisture due to the presence of apples.
