VEGAN APPLE PIE

I really wanted to make a tart that was apple. With many, many, really many apples. If you have been reading me even for a while, you know how much in the last decade I have definitely lost my head for this preparation full of memories, flavors and tradition. The only one capable of evoking, at the first bite, unforgettable moments and precious people. I leave you this vegan version of the apple tart. I used the Montersino vegan shortcrust pastry: there is clearly no better.
The pastry is the vegan one of the great Luca Montersino, which I follow meticulously.

Ingredients of the vegan shortcrust pastry:

500 grams of flour 00

250 grams of cane sugar or classic white granulated sugar

70 grams of extra virgin olive oil

70 grams of rice oil (but sunflower oil is fine too. Montersino prefers rice)

130 grams of water at room temperature

12 grams of baking powder

A pinch of salt

Finely grated rind of one orange and one lemon (or vanilla, cinnamon. Whichever you prefer)

You have to work in a robot. I did it with the kitchen Aid because I feel great and because there is a leaf, as the great Montersino indicates. Add sugar and water and let it work at low speed. Add the olive oil and then the rice as you work. Only at the end sift the flour and baking powder together and add slowly, letting it incorporate without haste until you get a homogeneous mixture. It will be very soft. You don’t have to worry. Work it until it is homogeneous and no more. Wrap in plastic wrap and let it rest for at least 3 hours but it is better if 4. The oil fats must be restored, bound and then formed over time what will be a perfect shortcrust pastry: for biscuits, pies and all the desserts that come to you in mind. Absolutely perfect! But how could it be otherwise.
I then took 5 medium-sized apples and peeled them well. I cut them into slices that are not too thin. I collected them in a container. I put the juice of a lemon and its zest. I add a spice mix that includes: ground cinnamon, ground ginger, ground turmeric, ground cloves, star anise and a pinch of pink pepper. You can use any spices you like. Also put a pinch of salt. Mix the apple slices well and once they are all flavored, roll out the pastry and place on an oiled baking tray. Once you have made the pastry base, put the apple slices on top. If you have shortcrust pastry like me, make some cords (I like them more than strips but it’s a matter of taste) and bake at 180 for 45-50 minutes but it depends on the oven.
